My love affair with prawn cocktail sandwiches is bordering on an obsession. My Mom would often pack them with a little tin of Dr Pepper for school trip packed lunches. I think I've been conditioned to see them as special event food. Only now I'm having prawn cocktail sandwiches every other lunchtime.
Ingredients (serves two)
50g prawns
2 tablespoons mayonnaise
1/4 teaspoon of tomato puree
A small pinch of cayenne pepper
Pat the prawns dry as any extra moisture dilutes the sauce and leads to a sloppy sandwich. This step is particularly important if you're using defrosted prawns.
Mix the mayonnaise and tomato puree together then sir in the cayenne pepper and prawns.
Serving suggestions - in sandwiches, over half an avocado or with shredded lettuce in a cocktail glass.
At Christmastime we add a splash of sherry to the sauce to make it a little more decadent
