Beef Tortillas Cooking With Children


My family favourites are dishes like these beef tortillas, everyone can help to prepare them and once served it's a lovely social dish with everyone chatting around the table as they pick their own fillings.
A juicy steak adds a lot of flavour to a dish and a little goes a long way, this recipe uses just one good quality rump steak and it's enough to feed two adults and two children.
Red meat is packed full of nutrients like iron and zinc which are important for growth and development in children. Meat isn't always a favourite with children as it takes a bit more effort to chew, tender lean cuts diced into bite size pieces work best in these tortillas. Plus the children can be involved in preparing the fillings. 

Jobs For Little Hands

Measuring out the dried spices with measuring spoons
Tearing up the lettuce
Pulling the coriander leaves off the stalks
Older children can chop the vegetables too

Ingredients 
1 rump steak
4 diced tomatoes
1 diced courgette
2 spring onions
A thumb sized piece of ginger cut into to matchsticks
A clove of crushed garlic
A ball of mozzarella sliced
A bunch of fresh coriander
Half an Iceburg lettuce
1 packet of wholewheat tortillas

Mix all of the dried ingredients together and rub them over the steak
Slice the steak into thin strips
Fry the steak with the garlic, ginger, courgettes and tomatoes
Fry until the steak is cooked the way you like it, medium rare takes about two minutes on each side.
Sprinkle with the coriander and spring onion before serving with mozzarella, lettuce and tortillas

Serve the meat in a large bowl and everyone can help themselves and assemble their own fillings
