Crab & Crawfish Waffles

Crab and crawfish waffles

The waffle machine has quickly become my favourite kitchen gadget. While plain waffles and bacon are a firm favourite there's much more than can be done with the waffle iron. These fresh crab and crawfish waffles are really light and make a lovely supper.

Ingredients Makes 6
120g crayfish tails
100g crab meat (white and brown)
150g plain flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon white pepper
1/4 teaspoon red pepper flakes
160ml coconut cream
30ml whole milk
90ml oil
2 eggs

Combine the dry ingredients in a bowl then add the wet ingredients including the cray fish tails and crab meat.

Ladle the mixture into the waffle iron.
This recipe will make 6 waffles which is around two large spoonfuls of mixture per waffle.
Cook for 5 minutes in the waffle machine.

Serving Suggestion
Serve with a salad. I like a mix of sweetcorn, tomatoes and rocket with a squeeze of lime juice.
My current favourite sauce is a teaspoon of Gran Luchito lime pickle mixed with a tablespoon of Greek yogurt but hollandaise would also work well with these waffles.
