Chewy Gooey Chocolate Chip Cookies

I can't resit a gooey choc chip cookie straight from the oven

I adore these cookies and often whip up a batch on a Monday morning with the intention of keeping them in the biscuit tin and enjoying them throughout the week, that never happens because I have no willpower when it comes to anything chocolatey.

These are best served warm from the oven, they will keep in an air tight container if they don't all get scoffed straight away. When I've got some on hand I also like to add 50g of chopped hazelnuts to the dough.
Once you've got the basic cookie dough recipe you can experiment adding any flavorings you like.

This recipe makes 12-15 cookies

Ingredients
150g butter
75g soft dark sugar
75g caster sugar
1 medium egg
1 tsp vanilla extract
225g plain flour
1 tsp bicarbonate soda
1/4 tsp salt
1/4 tsp grated nutmeg
100g chopped dark chocolate

For oven fresh cookies prepare dough in advance
and bake 30 mins before you are due to serve

 Pre heat oven 175c
Cream butter and sugar
Add beaten egg and vanilla extract then combine sugar mixture with all  of the dry ingredients and stir in chopped chocolate.



Place golf ball sized balls onto a greased baking tray bake in centre of oven for 8-10 minutes until golden brown. If the cookies have risen when you remove from oven press air out with a flat spatula.

The cookies are soft when they come out of oven but begin to firm up on wire cooling rack
Eat while still warm to enjoy a gooey soft middle or allow to cool completely for a chewy cookie.
