Silky Tofu Raspberry Pudding

This pudding is very close to a mousse but not quite as aerated,  it's a lovely thick creamy pudding though and it doesn't contain cream. Great if you're looking for a dairy alternative or a low fat option.

30 fresh raspberries around 200g
A table spoon icing sugar
A block of silken tofu

Reduce the raspberries and icing sugar to a puree then sieve and leave to cool
Whisk the cooled pure into the tofu and chill before serving which will make the pudding firm up slightly.
