Chocolate Courgette Cake

A moist chocolatey cake to use up the glut of courgettes from the kitchen garden. People seem very surprised when you tell them that this loaf cake has courgettes in it. You don't notice them because of the deep brown chocolate colour of the cake but they do add a lot of moisture.


This time of year is punctuated with endless variations of courgette loaf cake in our house. Despite only planting two courgette plants I'm still in awe of just how prolific they are.

Ingredients
250g self raising flour
50g cocoa powder
250g golden caster sugar
200ml vegetable oil
250g grated courgette
3 eggs
1/2 teaspoon vanilla
100g dark chocolate chips

Preheat the oven to 180c
Grease and line a 2lb loaf tin
Mix the dry ingredients together
Add the chocolate chips to the dry ingredients coating them in the chocolate flour mixture helps to stop them from sinking to the bottom of the loaf.
Beat the oil, eggs and vanilla together
Add the oil mixture to the dry mixture and combine until a thick glossy batter is formed
Pour the batter in to the loaf tin
Bake for 45-50 minutes
