Salmon Tartar in Tupperware Moulding Ring

This is a recipe from the current Tupperware catalogue (I have changed it slightly to match the ingredients I have in the cupboard). I have demonstrated it as a starter at my Valentine themed parties and it's been a great success. If you are looking for inspiration for a simple yet stunning starter look no further.

You will need
Tupperware Moulding rings £5.50
A small piece salmon
An avocado
A lime
A shallot
50 ml Olive oil
2 tbs Salt
2 tbs Sugar
Fresh parsley

Mix the salt and sugar in a bowl. Cover the salmon in the mixture and set aside for 2 hours to marinate.

Rinse the salmon in cold water and blot it dry on kitchen towel. Dice the salmon into small cubes.

Chop the parsley and shallot in the Tupperware herb Chopper.

Cut the lime in half. Use one half to make lime slices.

Mix the juice of the other half of the lime with the olive oil.

Peel and slice the avocado and brush it with the olive oil mixture.

Using the small moulding ring layer the ingredients as in the picture above.
Press the ingredients into place with the back of a spoon.

Gently remove the moulding ring and add a slice of lime before serving.

This recipe can be made in advance and kept in the fridge until ready to serve.
